The gastronomic part of Fish Culture is dominated by the chef Ilya Cherkashin, known to many for his culinary work in Ugolka, Duran Bar, Balcon, "Heroes" and Levantine. In the menu of the new project, he skillfully juggles a variety of seafood, sauces and spices. Salmon ceviche with puffed rice, hand roll with eel and eggplant, poke with tuna and papaya with peanut ponzu or Thai-style tempura octopus - each dish is presented in a non-trivial reading of the author.
